A CHEF STORY

Head Chef Jan Horak

With years of experience in some of London’s leading sushi restaurants, Executive Chef Jan Horak brings a deep passion for traditional Japanese cuisine and a relentless commitment to craftsmanship to Naori. His journey from kitchen porter to head Chef at Beaverbrook Townhouse’s Fuji Grill reflects years of dedication to mastering the art of sushi.

A defining influence on Jan’s career was his mentor, Yasuhiro, Head Chef at Yashin Sushi, under whom he trained for five years. Yasuhiro’s philosophy of precision, intent and mastery of the blade continues to shape Jan’s approach, where every cut and every detail matters.

Today, Jan brings those principles to Naori, combining traditional Japanese techniques with the creativity gained from designing and leading omakase experiences. The result is premium, made-to-order sushi that honours tradition while offering a refined and memorable dining experience.
